Spending time with friends and family can be special during the Holiday Season. I always like to think of ways to make that time exceptional and one way that usually pleases everyone is having something good to eat.

As you are preparing for the upcoming holidays, life doesn’t have to be complicated or stressful. Prepare simple food items to serve when guests come over. Try some of these fun suggestions:
  • Artichoke and Spinach Dip with Crostini
  • Seafood Soup with Hard Rolls
  • New Orleans Rum Cake (always good to have on hand during the holidays)
  • Homemade Onion Dip with all kinds of raw vegetables
  • Red Paper Straws (these are so deliciously cheesy with red peppers)
  • Yummy Chocolate Chip Cookies
Make it a priority to enjoy this upcoming holiday season. Learn when to say ‘NO”, reach out to those less fortunate, make sure you get some rest and plan ahead.

Here is the recipe for those “Yummy Chocolate Chip Cookies.” Enjoy!!

Ingredients

1 stick unsalted butter (room temperature)
¾ cup granulated sugar
¾ cup light brown sugar
1/4  cup unsweetened peanut butter (all natural - no oil added)
2 eggs— large
3 teaspoons of pure vanilla extract
2 1/3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
12 oz package of chocolate chips (pick your favorite flavor—semi-sweet, milk chocolate etc.) Preparation

Cream the butter and sugars in the large bowl of a free standing mixer. Add the peanut butter, beating until the mixture is smooth. Add the eggs beating in one at a time and add the pure vanilla extract. Be sure to scrape the bowl as needed.

In another bowl, sift together the flour, baking soda and salt. Gradually add the dry mixture to the wet, and combine at low speed until the dough comes together. Mix in the chocolate. Cover the dough with plastic wrap and chill for at least 30 minutes.

Preheat the oven to 375 F. Line the cookie sheet with parchment paper. Using a tablespoon or an ice cream scoop, drop heaping tablespoons of the dough onto the cookie sheet.
